Vegetarian Recipes
There's such a fabulous variety of low calorie vegetarian recipes to keep us forever interested in cooking - experimenting with flavours or trying new ingredients. We have a wealth of different cultures to draw on in creating our vegetarian meals. Traditional meals in many countries were, and are, typically vegetarian. Raw vegetables and fruit are always options for meals. Carrots, cucumber, beetroot, celery, zucchini, amongst other vegetables can be grated, sliced, chopped, and served with dips. They make great snacks when chopped into sticks - handy for lunches, and to keep in the fridge (sprinkled with a little lemon juice). Mix together grated beetroot and carrot for great taste and sensational colour! Add some condiments, a dressing, lemon or orange juice - you don't even need vegetarian recipes for these. If you find that noone is eating the fruit, you'll find that once you chop the fruit into bite size pieces, it starts to disappear. Chopping a few fruits into a fruit salad and squeezing lemon juice over the top is another way to encourage everyone to eat fresh fruit and to increase the amount of fibre needed everyday.  Using the recipes here, you can create a number of great meals. Here are some ideas: Lunch - Bruschetta, Mushroom parcels and Brown rice salad
- Sweet potato soup, Hommus with grilled vegetables on sourdough
- Cauliflower and broccoli salad, baby spinach leaves, salad of tomato, red onion and parsley
Dinner - One pot vegie delight, with lettuce cups
- Vegetable kebabs, stuffed tomatoes, and salad of baby green leaves
- Lasagna, asparagus and snowpea (mange tout) salad
- Zucchini and cannellini bean soup, tomato and cucumber bread salad
- Roast vegetable couscous, served with a green salad
- Spinach, fetta and dill risotto, with ratatouille
A serving of plain pasta or basmati rice works well with many dishes. If having salads only, consider serving crusty, grainy breads.
