Quick Vegetarian Recipes
Pushed for time? What we want are quick vegetarian recipes that are easy to prepare.
Crispy salads,
some pasta,
and rice dishes
are very quick to prepare. In minutes, you can also steam a selection of vegetables and add a dressing, for a nourishing meal.
Soups
and curries
can be cooked in around 30 minutes. Having on hand, basic tomato pasta sauce, vegetable stock or stock cubes, curry sauce/powder, a variety of canned legumes (beans), among others, will really help. I usually keep packets of frozen peas, baby beans, broad beans, and sweet corn in the freezer. Cooking meals and placing them in containers in the freezer is another way to keep things easy. You can freeze soups, pasta sauces, even lasagna, muffins, vegetable stock. I love stir frying onions, garlic, maybe ginger, in a little oil, adding liquid when necessary, and then, when the onions are soft, adding a mixture of vegetables – carrot, beans, broccoli, peas, more liquid, and lastly mushrooms. The amounts vary depending on the number of people you’re feeding. In this photo, you'll see red cabbage stir fried with broccoli, carrot, capsicum, garlic sprinkled with parsley. What a colour combo!
There are many variations – different types of vegetables, mixture of different mushrooms, just carrot and ginger, perhaps a few cashews or almonds, sprinkling of roasted sesame or sunflower seeds, and noodles instead of rice. These meals typically contain aromatics and spices such as cumin, garam masala, and chilli. Its good to have these in the pantry.
