Using the recipes here, a 2 course menu could consist of: - Ginger Cauliflower Soup
- Spinach and Eggplant with Chickpea
- Plain basmati rice or Spicy Rice and Peas with Almonds
- Yoghurt
For 4 or more people, have 1 course with a selection of dishes: - Red lentils
- Pumpkin and Pea Curry
- Cauliflower Curry
- Plain basmati rice
- Yoghurt (and add grated cucumber)
- Green salad
