I was given a lovely cookbook recently called 'the Persian kitchen: home cooking from the Middle East', by Neda Afrashi. There are some fabulous photos and great information including stories from Persian Literature. It's not a vegetarian cookbook, but there are a few vegetarian dishes. I love it! I particularly like the sound of Adas Polo (lentil rice with dates) - it'd be a dish I'd like to serve on Christmas day. It contains dates, sultanas, lentils, tumeric, cinnamon, saffron, black cumin and steamed rice.
