Kale, Cavolo Nero
The Gardening Show host, Peter Cundall who, in his early 80’s, recently retired from the show, says his health and fitness are because of gardening and eating kale. Kale is also known as cavolo nero or tuscan kale. I had never eaten kale until our local supermarket had it in recently.
I cooked a completely unplanned dish which evolved during the cooking process when I realised I had much too much water in the pot. So the end result was a soup with potato (1), sweet potato (half), chickpeas (half a can/tin), parsley stalks, and the kale (half the bunch). Just the kind of thing for our winter which is turning out to be the coldest we’ve have for many years (single digit figures overnight!).
I’d forgotten to add stock which is something I always do when I cook soup; however, I sprinkled salt on after serving and it was truly an enjoyable soup.
Kale can also be served steamed (like spinach) and dressed while warm with olive oil and lemon juice and eaten warm or cold.
